Books written in that fashion nearly always end up with
very choppy prose and lots of duplications because the
authors do not use the same style nor do they make sure
they don't recover what was done in other chapters.
How many books have you enjoyed with over 3 authors?


A rough equivalent of that can be done on-line through
the Wiki, as Brad indirectly suggested.  At the very
least, what's done there could be used as source material
for this sort of project, while not needing much direct
organization.

Still, as Jeff mentioned, it needs a lead - someone who
can at the very least ensure consistency and keep
pestering the contributors for their work.
